Ingredients

  • 1 cup Almond flour
  • 4 ounces Cream cheese
  • 4 large Eggs
  • 1 cup Unsweetened almond milk
  • 3 tablespoons Sweetener (erythritol or monk fruit)
  • 1 teaspoon Vanilla extract
  • 1 cup Cottage cheese (full-fat, small curd)
  • 1 cup Ricotta cheese (full-fat)
  • 1 teaspoon Lemon zest
  • 2 tablespoons Butter (for greasing the pan)
  • 1 tablespoon Powdered sweetener (for garnish)
  • 0.5 cup Optional berries (e.g., raspberries, blueberries)

Directions

Step 1

In a large mixing bowl, combine the almond flour, cream cheese, 3 of the eggs, unsweetened almond milk, 1 tablespoon of sweetener, and 1/2 teaspoon of vanilla extract. Blend the mixture with an immersion blender or whisk until smooth and lump-free. This will be your crepe batter.

Step 2

Heat a nonstick skillet over medium heat and lightly grease it with butter.

Step 3

Pour a small amount (about 1/4 cup) of batter into the skillet and tilt the pan in a circular motion to spread it into a thin, even layer.

Step 4

Cook the crepe for about 1-2 minutes, or until the top looks set and the edges begin to lift slightly. Carefully flip it using a spatula and cook for another 1 minute. Repeat this process with the remaining batter, greasing the skillet as needed. Set the cooked crepes aside.

Step 5

In another mixing bowl, prepare the filling by combining the cottage cheese, ricotta cheese, remaining egg, 2 tablespoons of sweetener, lemon zest, and the remaining 1/2 teaspoon of vanilla extract. Mix well until creamy.

Step 6

Place one crepe on a flat surface and spread about 2-3 tablespoons of the cheese filling evenly onto the center. Fold the sides of the crepe inward and then roll it up tightly, forming a small cylinder. Repeat with the remaining crepes and filling.

Step 7

Once all the crepes are filled, optionally reheat them briefly in a skillet or oven to warm through.

Step 8

Serve the Turos Palacsinta with a dusting of powdered sweetener and optional fresh berries for garnish. Enjoy warm!
