Ingredients

  • 4 pieces Large lettuce leaves (e.g., romaine or iceberg)
  • 8 slices Sliced turkey breast (deli-style, nitrate-free if possible)
  • 1 whole Ripe avocado
  • 6 pieces Cherry tomatoes
  • 0.25 whole Cucumber
  • 0.25 whole Red onion
  • 1 teaspoon Lemon juice
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Mayonnaise or mustard (optional)

Directions

Step 1

1. Prepare the vegetables: Slice the cherry tomatoes in half, cut the cucumber and red onion into thin strips, and set aside.

Step 2

2. Slice the avocado in half, remove the pit, and carefully scoop the flesh into a small bowl. Mash the avocado with a fork until smooth. Mix in the lemon juice, salt, and black pepper to create a quick guacamole.

Step 3

3. Lay out the large lettuce leaves on a clean flat surface. If the veins are thick, gently trim them down to make the leaves easier to roll.

Step 4

4. Spread a thin layer of the guacamole over the center of each lettuce leaf. Optionally, spread mayonnaise or mustard over the guacamole if desired.

Step 5

5. Place 2 slices of turkey breast onto the guacamole layer in each lettuce leaf.

Step 6

6. Add a few slices of cucumber, red onion, and halved cherry tomatoes on top of the turkey.

Step 7

7. Carefully roll each lettuce leaf into a wrap, tucking in the sides as you go to secure the filling. Use toothpicks to hold the wraps together if needed.

Step 8

8. Serve immediately and enjoy your fresh, low-carb Turkey & Avocado Wrap Sandwich!
