Ingredients

  • 4 cups Cauliflower rice
  • 2 5-ounce cans Canned tuna (packed in water)
  • 1.5 cups Cheddar cheese (shredded)
  • 4 ounces Cream cheese (softened)
  • 0.5 cups Heavy cream
  • 1 teaspoons Garlic powder
  • 1 teaspoons Onion powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Butter
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 cups Parmesan cheese (grated, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with butter or cooking spray and set aside.

Step 2

Heat a large skillet over medium heat and melt the butter. Add the cauliflower rice and sauté for 5-7 minutes, until it becomes slightly tender and most of the moisture evaporates.

Step 3

In a large mixing bowl, combine the softened cream cheese, heavy cream, garlic powder, onion powder, salt, and black pepper. Whisk until smooth.

Drain the canned tuna and flake it with a fork. Add the cauliflower rice, tuna, and 1 cup of shredded cheddar cheese to the mixing bowl. Stir everything together until evenly combined.

Transfer the mixture to the prepared baking dish and spread it out evenly.
