Ingredients

  • 60 grams Almond flour
  • 30 grams Coconut flour
  • 170 grams Erythritol granulated sweetener
  • 60 grams Unsalted butter (melted)
  • 4 large Eggs
  • 240 milliliters Heavy cream
  • 100 grams Cream cheese (softened)
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 1 pinch Pinch of salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a muffin tin or line it with paper liners.

Step 2

In a mixing bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, cinnamon, and a pinch of salt until evenly combined.

Step 3

In a separate large bowl, whisk the cream cheese until smooth. Add the eggs, one at a time, mixing well after each addition.

Step 4

Stir in the heavy cream, melted butter, and vanilla extract to the cream cheese mixture until fully incorporated and smooth.

Step 5

Gradually add the dry ingredients to the wet ingredients. Mix well to ensure a lump-free batter.

Step 6

Pour the batter evenly into the prepared muffin tin, filling each cavity about 3/4 full.

Step 7

Bake in the preheated oven for 30-35 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Step 8

Remove the queijadas from the oven and allow them to cool for 10-15 minutes before transferring to a wire rack to cool completely.

Step 9

Optionally, dust the tops with a light sprinkle of additional ground cinnamon before serving.
