Ingredients

  • 1.5 cups Almond flour
  • 0.25 cups Coconut flour
  • 4 ounces Cream cheese
  • 4 tablespoons Unsalted butter
  • 2 cups Mozzarella cheese (shredded)
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 large Eggs
  • 2 tablespoons Stevia or low-carb sweetener
  • 1 teaspoon Vanilla extract
  • 0.5 cup Sugar-free fruit preserves (optional for sweet filling)
  • 0.5 cup Cooked sausage or ham pieces (optional for savory filling)
  • 2 ounces Cream cheese (for filling)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a medium microwave-safe bowl, combine the cream cheese and shredded mozzarella cheese. Microwave in 30-second intervals, stirring in between, until melted and smooth.

Step 3

In a separate bowl, mix together the almond flour, coconut flour, baking powder, salt, and stevia or low-carb sweetener.

Step 4

To the melted cheese mixture, add the eggs and vanilla extract. Stir quickly to combine.

Step 5

Add the dry ingredients to the cheese and egg mixture, stirring until a dough forms. Use your hands to knead the dough if necessary. The dough will be sticky but manageable.

Step 6

Divide the dough into 8 equally sized balls and place them onto the prepared baking sheet. Flatten each ball slightly with your palm, creating a shallow indentation in the center for the filling.

Step 7

For sweet kolaches, spoon a small amount of sugar-free fruit preserves into the center of each pastry. For savory kolaches, add a small amount of sausage or ham and a dollop of cream cheese to the center.

Step 8

Bake for 15-18 minutes, or until the kolaches are golden brown and cooked through.

Step 9

Allow to cool slightly before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
