Ingredients

  • 1.5 cups Almond flour
  • 0.5 cup Unsweetened heavy cream
  • 4 tablespoons Ghee (clarified butter)
  • 0.25 cup Powdered erythritol (or any low-carb powdered sweetener of choice)
  • 0.5 teaspoons Cardamom powder
  • 2 tablespoons Chopped pistachios (optional, for garnish)
  • 1 pinch Saffron strands (optional, for garnish)

Directions

Step 1

Heat a non-stick pan over low to medium heat and add the ghee.

Step 2

Once the ghee melts, add the almond flour and roast it for 5-6 minutes, stirring constantly. The almond flour should become fragrant and slightly golden, but be careful not to burn it.

Step 3

Reduce the heat to low and slowly pour in the unsweetened heavy cream while stirring continuously to combine it with the roasted almond flour.

Step 4

Add the powdered erythritol and cardamom powder to the pan. Mix well until the mixture starts to thicken and pulls together in the pan.

Step 5

Continue cooking for another 3-4 minutes, stirring until the mixture forms a soft dough-like consistency.

Step 6

Turn off the heat and let the mixture cool down slightly so it’s safe to handle but still warm.

Step 7

Divide the mixture into 12 equal portions. Roll each portion into a smooth ball and then flatten it gently to form a traditional peda shape.

Step 8

If desired, garnish each peda with a few chopped pistachios and a saffron strand pressed lightly into the center.

Step 9

Let the pedas cool completely at room temperature to firm up before serving.

Step 10

Store the pedas in an airtight container in the refrigerator for up to 7 days. Serve chilled or at room temperature.
