  • 4 pieces Green bananas (unripe)
  • 1 cup Avocado oil (or any neutral high-smoke point oil)
  • 1 teaspoon Salt
  • 0.5 teaspoon Garlic powder (optional)
  • 2 pieces Lime wedges (for serving, optional)

Directions

Step 1

Peel the green bananas by cutting off both ends and making a shallow lengthwise slit along the peel. Use your fingers to pry the peel away from the fruit. Rinse and pat the bananas dry.

Step 2

Slice the green bananas into 1-inch thick rounds. Set aside.

Step 3

Heat the avocado oil in a heavy-bottomed skillet over medium heat until shimmering. To test if the oil is hot enough, drop a small piece of banana in—it should sizzle immediately.

Step 4

Carefully place the banana slices into the hot oil in a single layer, being careful not to overcrowd the pan. Fry for 2-3 minutes on each side until they are lightly golden but not fully cooked.

Step 5

Remove the banana slices from the oil and transfer them to a paper towel-lined plate to cool slightly.

Using the bottom of a small bowl, flat spatula, or a tostones press, gently flatten each banana slice to about 1/4-inch thickness.

Return the flattened banana slices to the hot oil in batches. Fry for an additional 2-3 minutes on each side until crispy and a deeper golden color.

Transfer the fried tostones to a plate lined with fresh paper towels to drain excess oil. Sprinkle immediately with salt and garlic powder, if using.
