Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 cup Vital wheat gluten
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Olive oil
  • 0.66 cup Warm water

Directions

Step 1

In a large mixing bowl, combine almond flour, coconut flour, vital wheat gluten, baking powder, and salt. Mix well using a whisk to ensure there are no lumps.

Step 2

Add olive oil to the dry ingredients and mix until the mixture has a crumbly texture.

Step 3

Gradually pour in the warm water, mixing with a spoon or your hands, until a smooth, soft dough forms. The dough should not be sticky; if it is, add a small amount of coconut flour (no more than 1 teaspoon at a time).

Step 4

Divide the dough into 6 equal portions and roll each into a ball. Cover the dough balls with a cloth to prevent them from drying out.

Step 5

Lightly flour a clean surface with almond flour and roll out each dough ball into a thin, round tortilla, approximately 6-8 inches in diameter.

Step 6

Heat a non-stick skillet or griddle over medium heat. Cook each tortilla for 1-2 minutes on each side or until lightly browned spots begin to form. Do not overcook, as it could dry out the tortillas.

Step 7

Transfer the cooked tortillas to a plate and cover with a clean kitchen towel to keep them warm and soft while you cook the remaining tortillas.

Step 8

Serve immediately or store in an airtight container in the refrigerator for up to 5 days. To reheat, warm them in a skillet over medium heat for 20-30 seconds on each side or microwave for 10-15 seconds.
