  • 1000 grams Ripe tomatoes
  • 3 tablespoons Olive oil
  • 2 large Garlic cloves
  • 1 whole Small onion
  • 1 teaspoon Paprika (sweet or smoked)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 0.5 teaspoon Stevia or erythritol (optional, for sweetness)
  • 5 leaves Fresh basil leaves

Directions

Step 1

Start by blanching the tomatoes to easily remove the skins. Bring a large pot of water to a boil and prepare a bowl of ice water on the side.

Cut a small 'X' at the bottom of each tomato and carefully drop them into the boiling water for 30-45 seconds.

Step 3

Using a slotted spoon, transfer the tomatoes into the ice water to cool quickly. Peel off the skins and chop the tomatoes into small chunks, removing the cores.

Heat the olive oil in a large skillet or pot over medium heat.
