Ingredients

  • 4 large eggs
  • 2 medium roma tomatoes
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 stalk green onions (optional, for garnish)

Directions

Step 1

Wash and dice the roma tomatoes into small pieces, discarding the stem ends.

Step 2

Peel and finely mince the garlic cloves.

Step 3

Crack the eggs into a medium-sized bowl. Add the salt and black pepper, then whisk until the mixture is smooth and uniform.

Step 4

Heat the olive oil in a non-stick skillet over medium heat.

Step 5

Add the minced garlic to the skillet and sauté for 30 seconds or until fragrant, being careful not to burn it.

Step 6

Add the diced tomatoes to the skillet. Cook for 3-4 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Step 7

Push the tomato mixture to one side of the skillet. Pour the whisked eggs into the other side of the skillet.

Step 8

Allow the eggs to set slightly, then gently stir the eggs with a spatula, incorporating the tomatoes slowly. Cook for another 2-3 minutes, stirring occasionally, until the eggs are fully cooked but still soft and creamy.

Step 9

Taste and adjust seasoning with additional salt or pepper, if desired.

Step 10

Transfer the tomato egg mixture to plates and garnish with thinly sliced green onions if using. Serve hot and enjoy!
