  • 2 tablespoons Tomato paste (unsweetened)
  • 4 cups Vegetable broth (low sodium)
  • 1 Bay leaf
  • 1 tablespoon Fresh basil leaves, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

Heat the olive oil in a medium-sized pot over medium heat.

Step 2

Add the minced garlic, chopped onion, and celery to the pot. Sauté for 4-5 minutes, or until the vegetables are soft and fragrant.

Stir in the chopped tomatoes and tomato paste. Cook for another 3-4 minutes, allowing the flavors to meld together.
