Ingredients

  • 6 cups Popped popcorn (air-popped, unsweetened)
  • 4 tablespoons Unsalted butter
  • 1 cup Granulated erythritol or monk fruit sweetener
  • 3 tablespoons Heavy cream
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Baking soda

Directions

Step 1

Prepare 6 cups of air-popped popcorn and transfer it to a large mixing bowl. Remove any unpopped kernels. Set aside.

Step 2

In a medium saucepan, melt the unsalted butter over medium heat.

Step 3

Add the erythritol or monk fruit sweetener and stir until dissolved, then bring the mixture to a gentle boil.

Step 4

Lower the heat slightly and add the heavy cream, stirring continuously for about 3-5 minutes until the mixture thickens and turns a light golden brown.

Step 5

Remove the saucepan from heat and quickly stir in the vanilla extract, salt, and baking soda. The mixture will foam slightly, which is normal.

Step 6

Pour the toffee mixture evenly over the prepared popcorn, tossing quickly to coat all the kernels before the toffee hardens.

Step 7

Spread the coated popcorn onto a parchment-lined baking sheet in a single layer.

Step 8

Let the popcorn cool and the toffee harden for about 10 minutes before serving.

Step 9

Store any leftovers in an airtight container for up to 3 days to maintain freshness.
