Ingredients

  • 4 large Eggs
  • 2 tablespoons Coconut oil
  • 2 cloves Garlic
  • 1 medium Red chili
  • 1 tablespoon Low-sodium soy sauce
  • 1 teaspoon Lime juice
  • 2 tablespoons Fresh cilantro
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Peel and mince the garlic cloves. Slice the red chili thinly into rings.

Step 2

Heat 2 tablespoons of coconut oil in a non-stick skillet over medium heat.

Crack the eggs one by one into the skillet, keeping the yolks intact for sunny-side-up eggs. Fry for 2-3 minutes or until the whites are set and crispy around the edges but the yolks remain runny. Carefully remove the fried eggs and set aside on a plate.
