Ingredients

  • 4 medium-sized Zucchini (or yellow squash)
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 teaspoons Garlic powder
  • 1 cup Cheddar cheese, shredded
  • 4 slices Cooked bacon, crumbled
  • 2 stalks Green onions, chopped
  • 0.5 cups Sour cream (for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

Step 2

Wash the zucchinis thoroughly and cut them in half lengthwise. Use a small spoon to scoop out the seeds and some of the flesh, creating a 'boat' shape. Be careful not to scoop too deeply to avoid breaking the skin.

Step 3

Brush the zucchini shells with olive oil and season evenly with salt, black pepper, and garlic powder.

Step 4

Place the zucchini halves cut-side down on the prepared baking sheet and bake for 10 minutes to soften slightly.
