  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 medium Shallots, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Heavy cream
  • 0.5 cup Chicken broth
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Fresh tarragon, chopped
  • 1 tablespoon Lemon juice
  • 4 cups Zucchini noodles or cauliflower rice (optional, for serving)

Directions

Step 1

Season the chicken breasts on both sides with salt and ground black pepper.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and fully cooked through (internal temperature should reach 165°F). Remove chicken from the skillet and set aside on a plate covered loosely with foil.

Step 3

In the same skillet, melt the butter over medium heat. Add the chopped shallots and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 4
