Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 tablespoon Psyllium husk powder
  • 2 tablespoons Erythritol
  • 0.5 cup Warm water
  • 0.25 cup Black sesame seeds
  • 2 tablespoons Unsalted butter (softened)
  • 1 tablespoon Powdered erythritol
  • 3 slices Fresh ginger slices
  • 4 cups Water (for broth)
  • 1-2 tablespoons Erythritol (for broth, optional)

Directions

Step 1

In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, and 2 tablespoons of erythritol. Mix well.

Step 2

Gradually pour in the warm water while mixing, until a pliable and non-sticky dough forms. Adjust water quantity slightly if needed.

Step 3

Cover the dough with a damp cloth and let it rest for 10 minutes.

Step 4

To make the filling, toast the black sesame seeds in a dry pan over low heat, stirring constantly until aromatic (2-3 minutes). Let cool.

Step 5

Grind the toasted sesame seeds into a fine powder using a food processor or spice grinder.

Step 6

In a small bowl, mix the ground sesame seeds with the softened butter and 1 tablespoon of powdered erythritol. Stir until a smooth filling is formed. Chill in the refrigerator for 10 minutes to firm up.

Step 7

Divide the dough into small, equal-sized portions (about 12-16 pieces). Roll each portion into a ball, then flatten it into a disc.

Step 8

Place a small amount of the sesame filling in the center of each disc. Gently seal the edges and roll back into a smooth ball.

Step 9

In a pot, bring 4 cups of water to a boil. Add the ginger slices and erythritol (optional) to make the broth. Simmer for 5 minutes.

Step 10

Carefully drop the tangyuan into the boiling ginger broth. Stir gently to prevent sticking. Cook until the balls float to the surface, about 2-3 minutes.

Step 11

Serve the tangyuan hot in the ginger broth. Enjoy this comforting low-carb dessert!
