In a mixing bowl, whisk together the eggs, unsweetened soy milk, erythritol, and soy sauce until well-combined.
Heat a tamago pan or a small nonstick skillet over medium-low heat. Lightly grease the pan with a small amount of avocado oil or cooking spray.
Pour a thin layer of the egg mixture into the pan, tilting it to ensure the mixture coats the surface evenly. Cook until the egg starts to set but is still slightly wet on top.
Using a spatula, gently roll the set egg to one side of the pan. Leave the rolled section in the pan and pour another thin layer of the egg mixture. Lift the rolled egg slightly to allow the new layer to flow underneath.
