  • 2 pounds Pork shoulder
  • 1 cup Pineapple chunks (fresh or canned, no sugar added)

  • 4 large Garlic cloves
  • 2 peppers Chipotle peppers in adobo sauce
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Olive oil
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 12 leaves Butter lettuce (for wraps)
  • 0.25 cup Chopped fresh cilantro
  • 4 pieces Lime wedges
  • 1 cup Diced avocado (optional)

Directions

Step 1

Cut the pork shoulder into bite-sized pieces and set aside.

Step 2

In a blender or food processor, combine pineapple chunks, chipotle peppers, garlic cloves, smoked paprika, cumin, oregano, apple cider vinegar, olive oil, salt, and black pepper. Blend until smooth to create the marinade.
