Ingredients

  • 1 pound Ground beef (85% lean)
  • 1 tablespoon Olive oil
  • 2 tablespoons Taco seasoning (low carb or homemade)
  • 2 tablespoons Water
  • 6 cups Romaine lettuce
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1 cup Cheddar cheese, shredded
  • 1 Avocado, diced
  • 1 quarter cup Sour cream
  • 1 tablespoon Lime juice
  • 2 tablespoons Cilantro, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat a skillet over medium heat and add olive oil.

Step 2

Once the oil is hot, add ground beef to the skillet, breaking it apart with a spatula.

Step 3

Cook the ground beef until browned, about 5-7 minutes. Drain any excess grease if necessary.

Step 4

Stir in taco seasoning and water, mixing well until the beef is evenly coated. Simmer for 2-3 minutes, then remove from heat and set aside to cool slightly.
