Ingredients

  • 1 lb Ground beef (85% lean)
  • 0.5 cup Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 2 tbsp Taco seasoning (sugar-free or homemade)
  • 1 cup Tomatoes, diced and drained
  • 2 cups Cauliflower rice, cooked and drained
  • 1.5 cups Shredded cheddar cheese
  • 4 oz Cream cheese, softened
  • 0.5 cup Sour cream
  • 0.25 cup Green onions, chopped
  • 2 tbsp Fresh cilantro, chopped
  • 1 medium Avocado, diced (optional for topping)
  • 2 tbsp Jalapeño slices (optional for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with non-stick spray or a light coating of olive oil.

Step 2

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up with a spatula as it cooks. Drain any excess grease.

Step 3

Add the diced onion and minced garlic to the skillet with the cooked beef. Sauté for 2-3 minutes until the onions are softened and fragrant.

Stir in the taco seasoning and diced tomatoes. Allow the mixture to simmer for 3-4 minutes, then remove from heat.
