Ingredients

  • 1 lb Ground beef (85% lean)
  • 1 tbsp Olive oil
  • 2 tbsp Taco seasoning (low-carb)
  • 2 cups Cauliflower rice
  • 2 cups Lettuce (shredded, such as Romaine)
  • 1 cup Cherry tomatoes (halved)
  • 0.5 cups Cheddar cheese (shredded)
  • 0.25 cups Sour cream
  • 1 whole Avocado (diced)
  • 2 tbsp Cilantro (chopped)
  • 1 whole Lime (cut into wedges)
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Once the oil is hot, add the ground beef to the skillet. Break up the meat with a wooden spoon and cook for 5-7 minutes, or until browned and fully cooked.
