Ingredients

  • 2 cups Cauliflower rice
  • 2 tablespoons Olive oil
  • 1 pound Boneless, skinless chicken breast
  • 2 tablespoons Taco seasoning (low-carb and sugar-free)
  • 2 cups Romaine lettuce
  • 1 cup Pico de gallo
  • 1 cup Guacamole
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 2 tablespoons Cilantro (chopped)
  • 4 pieces Lime wedges
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat and add the cauliflower rice.
