Ingredients

  • 1 cup Water
  • 0.5 cup Granulated erythritol (sweetener)
  • 0.5 teaspoon Xanthan gum
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Maple extract (optional for maple flavor)
  • 1 pinch Salt

Directions

Step 1

In a small saucepan, combine the water and granulated erythritol. Place over medium heat and stir to dissolve the sweetener.

Step 2

Continue heating until the mixture begins to simmer gently, but do not let it boil. Stir occasionally.

Step 3

Sprinkle in the xanthan gum a little at a time while whisking continuously to prevent clumping. This will help thicken the syrup.

Step 4

Reduce the heat to low and let the mixture cook for an additional 5-7 minutes until it starts to thicken slightly.

Step 5

Remove the saucepan from the heat and add the vanilla extract, maple extract (if using), and a pinch of salt. Stir to combine.

Allow the syrup to cool for about 10-15 minutes. It will thicken further as it cools.
