Ingredients

  • 1 pound Ground beef (80/20 lean-to-fat ratio)
  • 0.5 pound Ground pork
  • 1 large Egg
  • 0.25 cup Almond flour
  • 0.25 cup Grated Parmesan cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.75 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil (or avocado oil)
  • 0.25 cup Sugar-free ketchup
  • 2 tablespoons Rice vinegar (unsweetened)
  • 1.5 tablespoons Soy sauce (or coconut aminos for gluten-free option)
  • 1 teaspoon Liquid stevia (or your preferred low-carb sweetener)
  • 1 clove Garlic, minced
  • 0.25 teaspoon Xanthan gum
  • 0.5 cup Water

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large bowl, combine the ground beef, ground pork, egg, almond flour, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix until just combined, being careful not to overwork the meat.

Step 3

Using your hands, shape the mixture into 1.5-inch meatballs (you should have approximately 20 meatballs).

Step 4

Heat the olive oil in a large skillet over medium-high heat. Sear the meatballs in batches until they are browned on all sides, about 2 minutes per side. Remove the meatballs and place them on the prepared baking sheet.

Step 5

Bake the meatballs in the preheated oven for 12–15 minutes, or until fully cooked with an internal temperature of 160°F (72°C).

Step 6

While the meatballs are baking, prepare the sweet and sour sauce. In a small saucepan over medium heat, whisk together the sugar-free ketchup, rice vinegar, soy sauce, liquid stevia, minced garlic, and water.

Step 7

Sprinkle in the xanthan gum while whisking constantly to prevent clumping. Continue to cook the sauce for 3–4 minutes, or until it thickens to your desired consistency. Taste and adjust sweetness or tanginess if needed.

Step 8

Once the meatballs are fully cooked, transfer them to the saucepan with the sweet and sour sauce. Gently toss to coat the meatballs evenly with the sauce.

Step 9

Serve the meatballs hot, garnished with fresh chopped parsley or green onions if desired. Pair them with cauliflower rice or steamed low-carb vegetables for a complete meal.
