  • 1 cup coconut cream
  • 3 tablespoons erythritol or low-carb granulated sweetener
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 6 sheets banana leaves (for wrapping)
  • 6 pieces cooking twine or strips of banana leaf (for tying)

Directions

Step 1

Prepare the banana leaves by running them lightly over low heat or dipping them briefly in hot water to make them flexible. Pat them dry and set aside.

Step 2

In a large mixing bowl, combine the finely ground unsweetened shredded coconut, erythritol, and salt.

Step 3

Heat the coconut cream in a saucepan over medium heat until just warm (do not boil). Stir in vanilla extract.

Pour the warm coconut cream mixture into the bowl with the shredded coconut. Mix well until the coconut resembles a sticky consistency similar to cooked sticky rice. Let the mixture cool for 5–10 minutes.
