Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 tablespoon Psyllium husk powder
  • 0.5 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.75 cup Boiling water
  • 0.75 cup Paneer (Indian cottage cheese), grated
  • 1 unit Green chilies, finely chopped
  • 2 tablespoons Fresh cilantro, chopped
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Turmeric powder
  • 0.5 teaspoon Garam masala
  • 1 tablespoon Butter or ghee for cooking

Directions

Step 1

In a mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt.

Step 2

Pour the boiling water over the flour mixture and stir quickly to form a dough. Let it rest for about 5 minutes.

Step 3

While the dough rests, prepare the stuffing by combining grated paneer, green chilies, cilantro, ground cumin, turmeric powder, and garam masala in another bowl. Mix thoroughly.

Step 4

Divide the dough into 4 equal portions and roll each portion into a ball. Place the dough ball between two sheets of parchment paper and roll it into a thin circle using a rolling pin.

Step 5

Spoon approximately 2 tablespoons of the paneer stuffing in the center of the rolled dough. Fold the edges toward the center to enclose the filling, then gently flatten the stuffed dough into a circular shape again.

Step 6

Heat a non-stick pan or skillet over medium heat. Add a small amount of butter or ghee to the pan.

Step 7

Carefully place the stuffed flatbread onto the hot pan. Cook for 2-3 minutes on each side or until golden brown.

Step 8

Repeat the process for the remaining dough portions.

Step 9

Serve warm with a side of yogurt or your favorite low-carb chutney.
