Ingredients

  • 4 pieces Large bell peppers (any color)
  • 2 tablespoons Olive oil
  • 1 pound Ground turkey
  • 2 cups Cauliflower rice
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 cup Diced tomatoes (canned, drained)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded mozzarella cheese
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Set the hollowed peppers aside.

Step 3

In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.

Add the ground turkey to the skillet. Cook, breaking it up with a spatula, until it is browned and cooked through, about 5-6 minutes.
