Ingredients

  • 4 pieces Large artichokes
  • 1 cup Almond flour
  • 0.5 cup Grated Parmesan cheese
  • 0.25 cup Fresh parsley, finely chopped
  • 2 cloves Fresh garlic, minced
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 cups Water

Directions

Step 1

Prepare the artichokes by trimming the stems so they can stand upright in the pot. Cut off the top inch of each artichoke and snip the sharp tips off the remaining outer leaves with kitchen scissors. Rinse thoroughly to remove any debris from between the leaves.

Step 2

In a medium mixing bowl, combine almond flour, grated Parmesan cheese, chopped parsley, minced garlic, olive oil, lemon juice, salt, and pepper. Mix well to create the stuffing mixture.

Step 3

Gently loosen the leaves of each artichoke and stuff about 1 tablespoon of the almond flour mixture between the leaves, working your way around the artichoke. Press the remaining mixture into the center cavity of each artichoke.

Step 4

In a large pot or Dutch oven, add 4 cups of water and bring to a simmer. Carefully place the stuffed artichokes upright into the pot. Cover with a lid and steam on medium-low heat for 45-50 minutes or until the artichoke leaves are tender and can be easily pulled off.

Step 5

Optional: For a golden-brown finish, place the cooked artichokes on a baking sheet and broil in the oven for 3-5 minutes.
