Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 4 tablespoons Unsalted butter
  • 4 ounces Cream cheese
  • 1 large Egg
  • 2 tablespoons Powdered erythritol
  • 1 teaspoon Vanilla extract
  • 1 cup Strawberries
  • 2 tablespoons Granulated erythritol
  • 2 tablespoons Heavy cream
  • 3 tablespoons Powdered sugar-free sweetener
  • 1 teaspoon Water

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, and powdered erythritol.

Step 3

Cut the cold butter into small pieces and add it to the dry ingredients. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.

Step 4

Add the cream cheese, egg, and vanilla extract to the mixture. Knead until a smooth dough forms.

Step 5

Place the dough between two sheets of parchment paper and roll it out into a thin, rectangular shape, about ¼-inch thick.

Step 6

Using a knife or a pizza cutter, cut the dough into 8 equal rectangles. Carefully transfer 4 rectangles onto the prepared baking sheet.

Step 7

In a small pot over medium heat, add the strawberries and granulated erythritol. Cook while stirring occasionally until the strawberries break down and form a thick jam-like consistency, about 5-7 minutes.

Step 8

Place a tablespoon of the strawberry filling in the center of each rectangle on the baking sheet. Spread evenly, leaving a small border around the edges.

Step 9

Place the remaining 4 rectangles on top of the filled ones and press the edges together with a fork to seal.

Step 10

Using a fork, poke small holes on the tops of each strudel to allow steam to release during baking.

Step 11

Bake in the preheated oven for 20–25 minutes or until golden brown. Remove from the oven and let them cool slightly.

Step 12

To make the glaze, mix the powdered sugar-free sweetener, heavy cream, and water in a small bowl until smooth.

Step 13

Drizzle the glaze over the cooled strudels before serving. Enjoy your low-carb strawberry toaster strudels!
