Ingredients

  • 200 grams Fresh strawberries
  • 3 tablespoons Powdered erythritol or any low-carb sweetener
  • 240 milliliters Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Unflavored gelatin powder
  • 2 tablespoons Water

Directions

Step 1

Wash the strawberries and remove the stems. Blend the strawberries into a smooth puree using a blender or food processor. This should yield about 1 cup of puree.

Step 2

In a small bowl, combine the gelatin powder with water. Let it sit for 5 minutes to bloom.

Step 3

In a small saucepan over medium heat, warm the strawberry puree and powdered erythritol until it is heated through and the sweetener is fully dissolved. Do not bring it to a boil.

Stir the bloomed gelatin into the warm strawberry mixture until completely dissolved. Remove from heat and let it cool to room temperature.
