Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Coconut flour
  • 2 tablespoons Granulated erythritol (or preferred low-carb sweetener)
  • 1 teaspoon Baking powder
  • 4 tablespoons Unsalted butter
  • 2 ounces Cream cheese
  • 2 cups Shredded mozzarella cheese
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh strawberries, thinly sliced
  • 2 tablespoons Sugar-free strawberry jam
  • 1 large Egg yolk (for egg wash)
  • 1 teaspoon Unsweetened almond milk (for egg wash)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a mixing bowl, combine almond flour, coconut flour, sweetener, and baking powder. Mix well and set aside.

Step 3

In a microwave-safe bowl, combine shredded mozzarella cheese, butter, and cream cheese. Microwave in 30-second intervals, stirring in between, until the mixture is fully melted and smooth.

Step 4

Add the melted cheese mixture to the dry ingredients. Crack in the egg and add vanilla extract. Mix thoroughly until the dough comes together. It should be slightly sticky but manageable.
