Ingredients

  • 500 grams Fresh strawberries
  • 50 grams Granulated erythritol (or preferred low-carb sweetener)
  • 2 tablespoons Fresh lemon juice
  • 0.5 teaspoons Vanilla extract
  • 0.5 teaspoons Xanthan gum
  • 2 tablespoons Water

Directions

Step 1

Wash and hull the strawberries, then chop them into small pieces for easier cooking.

Step 2

In a medium-sized saucepan, combine the chopped strawberries, erythritol, and lemon juice. Heat the mixture over medium heat, stirring occasionally, until the strawberries begin to release their juices (about 5 minutes).

Step 3

Use a potato masher or the back of a spoon to gently mash the strawberries to your desired consistency. For a smoother texture, you can use an immersion blender to blend the mixture partially.

Step 4

Lower the heat to medium-low and let the mixture simmer for 15-20 minutes, stirring occasionally to prevent sticking. The mixture should thicken as it cooks.

Step 5

In a small bowl, whisk together the xanthan gum and water to create a slurry.

Step 6

Stir the xanthan gum slurry into the strawberry mixture and continue cooking for another 3-5 minutes to allow the confiture to thicken further.

Step 7

Remove the saucepan from the heat and stir in the vanilla extract. Allow the mixture to cool slightly.

Step 8

Transfer the confiture to a sterilized glass jar and let it cool to room temperature before sealing tightly and storing in the refrigerator.

Step 9

The strawberry confiture can be stored in the refrigerator for up to 2 weeks. Enjoy it as a topping for low-carb bread, yogurt, or desserts!
