Ingredients

  • 300 grams Water spinach (kangkung)
  • 3 large Garlic cloves, minced
  • 1 medium Red chili (optional, adjust to taste), sliced
  • 2 tablespoons Soy sauce (low sodium, gluten-free if needed)
  • 1 tablespoon Oyster sauce (optional, use a low-carb version if desired)
  • 1 teaspoon Sesame oil
  • 1 tablespoon Vegetable or avocado oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 tablespoons Water

Directions

Step 1

Rinse the water spinach thoroughly under cold water to remove dirt and grit. Trim the tough ends of the stems, then cut the stems and leaves into 2-3 inch sections. Set aside.

Heat the vegetable or avocado oil in a large wok or skillet over medium-high heat.

Add the minced garlic and sliced red chili (if using). Stir-fry for 20-30 seconds or until fragrant, being careful not to burn the garlic.
