Ingredients

  • 200 grams Shirataki noodles
  • 1 large Zucchini (spiralized)
  • 1 medium Carrot (spiralized)
  • 1 medium Red bell pepper (thinly sliced)
  • 1 cup Broccoli florets
  • 2 cloves Garlic (minced)
  • 1 teaspoon Fresh ginger (grated)
  • 2 tablespoons Soy sauce (low sodium)
  • 1 tablespoon Sesame oil
  • 1 tablespoon Olive oil
  • 2 stalks Green onions (sliced)
  • 1 teaspoon Sesame seeds
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Start by rinsing and draining the shirataki noodles. Pat them dry with a paper towel to remove excess moisture. Set aside.

Step 2

Heat the olive oil in a large skillet or wok over medium-high heat. Add the broccoli florets and red bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

Step 3

Push the vegetables to one side of the skillet. Add the garlic and ginger to the empty space and sauté for about 30 seconds until fragrant.
