Ingredients

  • 200 grams Morning glory (water spinach)
  • 4 cloves Garlic
  • 2 small Red chili
  • 1 tablespoon Soy sauce (lite or low-sodium)
  • 1 tablespoon Oyster sauce (low-carb, sugar-free)
  • 1 teaspoon Fish sauce
  • 1 teaspoon Erythritol (or sweetener of choice)
  • 1 tablespoon Oil (avocado or coconut oil)
  • 2 tablespoons Water

Directions

Step 1

Wash the morning glory thoroughly. Trim off the tough stem ends and cut the rest into 3-4 inch pieces, separating the stems from the leaves.

Step 2

Peel and finely chop the garlic. Slice the red chilies thinly.

Step 3

In a small bowl, mix the soy sauce, oyster sauce, fish sauce, erythritol, and water. Set aside.

Step 4

Heat oil in a wok or large skillet over medium-high heat until hot.

Step 5

Add the chopped garlic and red chilies to the oil and stir-fry for about 30 seconds until fragrant.

Step 6

Increase the heat to high and add the morning glory stems. Stir-fry for about 1 minute to soften slightly.

Step 7

Add the morning glory leaves and pour in the prepared sauce mixture. Stir-fry everything together quickly for another 1-2 minutes until the leaves are wilted but still vibrant green.

Step 8

Taste and adjust seasoning if necessary. Serve immediately as a side dish or over cauliflower rice for a complete low-carb meal.
