Ingredients

  • 250 grams Jungle fern fronds (cleaned and trimmed)
  • 3 cloves Garlic (minced)
  • 1 medium Red chili (sliced thin, optional for heat)
  • 2 tablespoons Coconut oil (or any neutral oil for stir-frying)
  • 1 tablespoon Soy sauce (low sodium, or substitute with coconut aminos for gluten-free)
  • 1 teaspoon Fish sauce (optional for added umami, omit for vegan)
  • 1 tablespoon Lime juice (freshly squeezed)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and prepare the jungle fern by trimming any tough ends and keeping only the tender fronds. Let the fronds drain in a colander while you prep the other ingredients.

Step 2

Heat a wok or large skillet over medium-high heat. Add the coconut oil and swirl to coat the pan.

Step 3

Once the oil is hot, add the minced garlic and sliced chili. Stir-fry for 30 seconds to release their aroma, being careful not to let the garlic burn.

Step 4

Add the jungle fern fronds to the wok. Stir constantly for about 3-4 minutes, allowing them to soften and slightly wilt.

Step 5

Pour in the soy sauce, fish sauce (if using), lime juice, salt, and black pepper. Toss well to evenly coat the fern in the seasoning.

Step 6

Continue stir-frying for an additional 2-3 minutes, or until the fern is tender but still slightly crisp. Taste and adjust seasoning as needed.

Step 7

Remove from heat and transfer to a serving plate. Serve immediately as a side dish or a main course with your favorite protein.
