Ingredients

  • 450 grams beef sirloin, thinly sliced
  • 3 tablespoons soy sauce (low sodium)
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 medium zucchini, sliced into half-moons
  • 200 grams broccoli florets
  • 1 medium red bell pepper, thinly sliced
  • 150 grams mushrooms, sliced
  • 2 tablespoons coconut oil (or any stir-fry oil)
  • 2 tablespoons fresh parsley or cilantro, chopped (optional garnish)
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt (optional)

Directions

Step 1

In a medium bowl, combine the sliced beef with 2 tablespoons of soy sauce and 1 teaspoon of sesame oil. Mix well, then set it aside to marinate for 10 minutes.

Step 2

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Step 3

Add the marinated beef to the skillet and stir-fry for 2-3 minutes until it’s just cooked through. Remove the beef from the skillet and set aside.

Step 4

In the same skillet, add another tablespoon of coconut oil. Add the minced garlic and ginger, stirring for 30 seconds until aromatic.

Step 5

Add the broccoli, zucchini, red bell pepper, and mushrooms to the skillet. Stir-fry for 4-5 minutes, stirring frequently, until the vegetables are tender-crisp.

Step 6

Return the cooked beef to the skillet and mix well with the vegetables.

Step 7

Add the remaining 1 tablespoon of soy sauce and a drizzle of sesame oil. Sprinkle with black pepper and salt if desired.

Step 8

Stir everything together for another 1-2 minutes until heated through and the flavors are combined.

Step 9

Remove from heat and garnish with fresh parsley or cilantro, if using. Serve immediately.
