Ingredients

  • 2 pieces (8 ounces each) Ribeye steak
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup (packed) Fresh parsley
  • 0.5 cup (packed) Fresh cilantro
  • 3 cloves Garlic
  • 2 tablespoons Red wine vinegar
  • 0.5 teaspoon Red chili flakes
  • 1 tablespoon Lemon juice
  • 0.25 cup Olive oil (for sauce)

Directions

Step 1

Remove the steaks from the refrigerator and let them come to room temperature for about 20 minutes.

Step 2

Pat the steaks dry with a paper towel and rub them with 2 tablespoons of olive oil. Season both sides of the steaks evenly with salt and black pepper.

Step 3

Heat a large skillet or grill pan over high heat until very hot. Sear the steaks for 3-4 minutes on each side for medium-rare, or adjust the cooking time to your desired doneness.

Step 4

Remove the steaks from the heat and let them rest for 5 minutes under foil to retain juices.

Step 5

While the steaks rest, prepare the chimichurri sauce. In a food processor or blender, combine parsley, cilantro, garlic, red wine vinegar, red chili flakes, lemon juice, and 1/4 cup olive oil.

Step 6

Pulse the mixture until finely chopped but not pureed. Taste and adjust the seasoning as needed.

Step 7

To serve, slice the steak against the grain and drizzle generously with the chimichurri sauce. Serve immediately and enjoy!
