Ingredients

  • 2 pieces (6-8 ounces each) Ribeye steak or sirloin steak
  • 3 medium-sized Turnips
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 1 teaspoon (divided) Salt
  • 1 teaspoon (divided) Black pepper
  • 2 tablespoons Unsalted butter
  • 2 sprigs Fresh thyme or rosemary (optional)
  • 2 cloves Minced garlic

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel the turnips and cut them into thin, fry-like strips (about 1/4 inch wide).

Step 3

In a bowl, toss the turnip strips with 2 tablespoons of olive oil, garlic powder, paprika, and 1/2 teaspoon each of salt and black pepper.

Step 4

Spread the seasoned turnip strips evenly on the prepared baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Step 5

While the turnips are baking, pat the steaks dry with paper towels and season both sides generously with the remaining 1/2 teaspoon of salt and black pepper.

Step 6

Heat a cast iron skillet or heavy-duty pan over high heat until smoking hot. Add 1 tablespoon of olive oil and swirl to coat the pan.

Step 7

Place the steaks in the pan and sear for 2-3 minutes per side for medium-rare, or longer depending on your desired doneness.

Step 8

Lower the heat to medium-low and add the butter, minced garlic, and thyme or rosemary sprigs (if using) to the pan. Tilt the pan slightly and use a spoon to baste the steaks with the melted butter and aromatics for another 1-2 minutes.

Step 9

Remove the steaks from the pan and let them rest on a cutting board for 5 minutes to retain their juices.

Step 10

Serve the steaks hot alongside the crispy turnip fries. Optionally, garnish with fresh herbs or a sprinkle of sea salt for extra flavor.
