Ingredients

  • 1 large (about 8 inches) Low-carb tortilla
  • 1 cup Fresh spinach
  • 4 large Egg whites
  • 2 tablespoons (crumbled) Feta cheese
  • 1 teaspoon Olive oil
  • 1 clove (minced) Garlic
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat a non-stick skillet over medium heat. Add olive oil and let it warm up.

Step 2

Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.

Step 3

Add the fresh spinach to the skillet. Cook for 2-3 minutes, stirring occasionally, until wilted. Remove the spinach from the skillet and set aside.

In a small bowl, whisk the egg whites with salt and black pepper until well combined.

Pour the egg whites into the skillet and cook over medium heat for 2-3 minutes, stirring occasionally, until they are set and scrambled. Remove from heat.
