Ingredients

  • 12 large eggs worth (approximately 1.5 cups) Egg whites

  • 0.5 cups Shredded Gruyere cheese
  • 0.25 cups Shredded sharp cheddar cheese
  • 2 tablespoons Unsweetened almond milk
  • 2 slices Cooked bacon, finely chopped (optional for non-vegetarian)
  • 0.25 cups Baby spinach, chopped
  • 2 stalks Green onions, finely sliced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and prepare a muffin tin by lightly greasing each cup with cooking spray or brushing with oil.

In a blender, combine the egg whites, cottage cheese, shredded Gruyere cheese, shredded cheddar cheese, almond milk, salt, and black pepper. Blend until smooth and frothy, about 30 seconds.
