Ingredients

  • 500 grams sponge gourd (ridge gourd/turai)
  • 1 medium onion
  • 1 medium tomato
  • 1 teaspoon ginger garlic paste
  • 2 small green chilies
  • 2 tablespoons coconut oil
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon garam masala
  • 0.5 teaspoon salt
  • 100 milliliters water
  • 2 tablespoons fresh coriander leaves

Directions

Step 1

Peel the sponge gourd (ridge gourd/turai) and chop it into small cubes. Set aside.

Step 2

Finely chop the onion, tomato, and green chilies. Set them aside.

Step 3

Heat coconut oil in a pan over medium heat.

Step 4

Add cumin seeds and let them splutter for a few seconds.

Step 5

Add the chopped onions to the pan and sauté until they turn golden brown, about 5 minutes.

Stir in the ginger garlic paste and green chilies. Sauté for 1-2 minutes until the raw smell disappears.

Add the chopped tomato to the pan. Cook until the tomato becomes soft and mushy, about 5 minutes.

Sprinkle turmeric powder, red chili powder, and coriander powder. Mix well and cook for 1-2 minutes.
