Ingredients

  • 1 cup Fresh spinach
  • 3 large Eggs
  • 1 tablespoon Heavy cream (optional, for extra fluffiness)
  • 1 teaspoon Olive oil or butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Grated cheese (optional, such as cheddar or mozzarella)

Directions

Step 1

Wash the fresh spinach thoroughly and pat it dry with a paper towel.

Step 2

Crack the eggs into a medium-sized bowl. If using heavy cream, add it to the bowl. Whisk the eggs with a fork or whisk until fully combined and fluffy.

Step 3

Add the salt and black pepper to the egg mixture, and whisk again briefly.

Step 4

Heat the olive oil or butter in a non-stick skillet over medium heat, swirling to coat the bottom of the pan evenly.

Step 5

Add the spinach to the skillet and sauté for 1-2 minutes, stirring occasionally, until the spinach wilts slightly.

Step 6

Pour the whisked eggs over the spinach in the skillet, tilting the pan slightly to ensure the eggs spread evenly.

Step 7

Let the eggs cook undisturbed for about 1-2 minutes, or until the edges begin to set.

Step 8

If using grated cheese, sprinkle it evenly over one half of the omelette at this stage.

Step 9

Fold the omelette in half using a spatula, covering the cheese and spinach filling.

Step 10

Lower the heat to medium-low and cook for an additional 1-2 minutes, or until the eggs are fully cooked but still moist inside.

Step 11

Carefully slide the omelette onto a plate, garnish with extra black pepper if desired, and serve immediately.
