Ingredients

  • 2 large Egg yolks

  • 0.25 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 30 grams Butter or olive oil (optional, for serving)

Directions

Step 1

Wash the spinach thoroughly and blanch it in boiling water for 1 minute, then transfer to an ice water bath to stop the cooking process.

Drain the spinach and squeeze out as much water as possible. Finely chop the spinach or blend it into a paste if preferred.

In a mixing bowl, combine the chopped spinach, ricotta cheese, grated Parmesan, almond flour, egg yolks, garlic powder, nutmeg, salt, and black pepper. Mix until a soft dough forms.
