Ingredients

  • 1 piece Low-carb tortilla or wrap
  • 2 cups Fresh spinach
  • 1 ounce Feta cheese, crumbled
  • 2 pieces Eggs
  • 1 teaspoon Garlic, minced
  • 1 tablespoon Butter or olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat a medium-sized skillet over medium heat and add the butter or olive oil.

Step 2

Once the butter is melted, add the minced garlic and cook for 30 seconds until fragrant.

Step 3

Add the fresh spinach to the skillet and sauté for 2-3 minutes until it wilts. Remove the spinach from the pan and set aside.

Step 4

In a small bowl, whisk the eggs with a pinch of salt and pepper until well combined.

Pour the eggs into the same skillet and cook for 2-3 minutes, stirring gently, until softly scrambled.
