Ingredients

  • 2 cups Fresh spinach
  • 1 cup Almond flour
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons Cream cheese
  • 2 large Eggs
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

Rinse and dry the spinach, then finely chop it. Set aside.

Step 3

In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for 30-40 seconds, or until the cheese is melted and can be stirred into a smooth mixture.

Step 4

In a large mixing bowl, whisk the eggs. Then, add the almond flour, baking powder, garlic powder, onion powder, salt, and black pepper. Stir to combine.

Step 5

Add the melted cheese mixture to the bowl with the dry ingredients. Mix well using a spatula or your hands until a dough forms.

Step 6

Fold in the chopped spinach and grated Parmesan cheese evenly into the dough.

Step 7

Transfer the dough to the prepared baking sheet and shape it into a rectangle or oval, about 1 inch thick.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the bread is golden brown and firm to the touch.

Step 9

Remove from the oven and let it cool on the baking sheet for 5 minutes before slicing.

Step 10

Serve warm as a side dish, snack, or appetizer. Store leftovers in an airtight container in the refrigerator for up to 3 days.
