Ingredients

  • 1 sheet low-carb puff pastry sheet
  • 2 cups fresh spinach
  • 1 cup feta cheese
  • 4 tablespoons cream cheese
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 large egg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Heat olive oil in a skillet over medium heat. Mince the garlic and sauté it in the olive oil for 1-2 minutes until fragrant.

Step 3

Add the fresh spinach to the skillet and cook, stirring occasionally, until wilted. This should take about 3-4 minutes. Remove from heat and let it cool slightly.

Step 4

In a mixing bowl, combine the cooked spinach, feta cheese, softened cream cheese, salt, and black pepper. Mix until well incorporated.

Step 5

Roll out the low-carb puff pastry sheet on a lightly floured surface, if needed, and cut it into 4 equal squares.

Step 6

Place a generous spoonful of the spinach and feta filling in the center of each pastry square.

Step 7

Fold each square into a triangle (or desired shape), and crimp the edges with a fork to seal them properly.

Step 8

Beat the egg in a small bowl and brush the top of each pastry with the egg wash for a golden finish.

Step 9

Place the pastries on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the pastries are puffed and golden brown.

Step 10

Allow to cool for a few minutes before serving. Enjoy warm or at room temperature.
