Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring between each interval, until the mixture is melted and smooth.
In a separate bowl, mix the almond flour, coconut flour, and salt. Add the melted cheese mixture and one of the eggs to the dry ingredients. Knead the dough until it is smooth and well combined. If the dough feels too sticky, you can sprinkle a little extra almond flour.
Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick. Set aside.
In a skillet over medium heat, cook the fresh spinach until wilted. Remove from heat and allow it to cool slightly, then chop it finely.
