Ingredients

  • 200 grams Konjac noodles (shirataki noodles)
  • 150 grams Chicken breast, thinly sliced
  • 1 tablespoon Gochugaru (Korean red chili flakes)
  • 1 tablespoon Gochujang (Korean chili paste, low-carb if available)
  • 1 tablespoon Soy sauce (low-sodium)
  • 1 teaspoon Sesame oil
  • 2 cloves Garlic, minced
  • 3 stalks Green onions, chopped (reserve some for garnish)
  • 50 grams Mozzarella cheese, shredded (optional)
  • 2 tablespoons Water
  • 1 teaspoon Sesame seeds (optional for garnish)
  • 1 tablespoon Oil (for cooking)

Directions

Step 1

Drain and rinse the konjac noodles thoroughly under cold water to remove the briny odor. Set aside.

Step 2

Heat 1 tablespoon of oil in a skillet or wok over medium-high heat.

Step 3

Add the thinly sliced chicken breast to the skillet and season lightly with salt and pepper. Cook for 4-5 minutes until the chicken is fully cooked and lightly browned. Remove from the skillet and set aside.

Step 4

In the same skillet, lower the heat to medium and add the sesame oil along with the minced garlic and chopped green onions. Sauté for 1-2 minutes until fragrant.

Step 5

Add the gochugaru, gochujang, soy sauce, and 2 tablespoons of water to the skillet. Stir well to create a smooth sauce, ensuring the ingredients are evenly combined.

Step 6

Return the cooked chicken to the skillet, mixing it into the spicy sauce.

Step 7

Add the rinsed konjac noodles to the skillet, tossing them with the chicken and sauce until they are fully coated and heated through, about 2-3 minutes.

Step 8

Optional: Sprinkle the shredded mozzarella cheese over the noodles and cover the skillet for 1-2 minutes until the cheese melts, creating a creamy, cheesy buldak topping.

Step 9

Remove the skillet from heat and plate the noodles. Garnish with remaining chopped green onions and a sprinkle of sesame seeds if desired.

Step 10

Serve immediately and enjoy your fiery Low Carb Spicy Buldak Noodles!
