Ingredients

  • 4 Low-carb tortillas
  • 1 cup Black beans
  • 1 tablespoon Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 2 tablespoons Lime juice
  • 0.5 teaspoon Salt
  • 1 Red bell pepper
  • 0.5 Red onion
  • 2 tablespoons Fresh cilantro
  • 4 tablespoons Sour cream (optional, low-carb alternative)
  • 4 Lettuce leaves

Directions

Step 1

Heat a skillet over medium heat and add olive oil.

Step 2

Mince the garlic cloves and sauté them in the olive oil until fragrant, about 1 minute.

Step 3

Add the black beans, smoked paprika, ground cumin, chili powder, lime juice, and salt to the skillet. Stir well and cook for 4-5 minutes until the beans are heated through and slightly thickened.
